Onion Tomato Rice
Ingredients
Oil - 1 tbsp
Mustard seeds / Rai - 1/2 tsp
Cumin seeds / Jeera - 1 tsp
Curry leaves / Curry patta - A few
Green chilli / Hari mirch - 2 Slited
Ginger / Adrakh - 1 Inch chopped
Onion / Pyaaz - 1 Sliced
Salt - As per taste
Tomato / Tamatar - 2 Sliced
Turmeric powder / Haldi powder - 1/2 tsp
Red chilli powder / Lal mirchi powder - 1 tsp
Cumin seeds powder / Jeera powder - 1 tsp
Black pepper powder / Kali mirch powder - 1/2 tsp
Cooked basmati rice / Pake huye chawal - 3 Cups
Coriander leaves / Hara dhaniya - A handful + For garnishing
tsp = teaspoon
tbsp = tablespoon
Instructions
Heat oil in a pan. Add mustard seeds, cumin seeds, curry leaves, green chilli, and ginger. Mix well and saute it for a few seconds.
Now add onion. Mix well. Then add salt and mix well. Saute for 1 to 2 minutes on medium flame. Keep stirring occasionally.
Add tomato. Mix well. Saute it for 1 to 2 minutes on medium flame.
Further, add turmeric powder, red chilli powder, cumin seeds powder, and black pepper powder. Mix well. Saute it for 1 to 2 minutes on medium flame. Stir it occasionally.
Now add coriander leaves. Mix well. Then add cooked rice and mix well with light hands.
Once done, garnish it with coriander leaves and take it out to a serving bowl.
'Onion Tomato Rice' is ready to be served.
Dry Fruits Tomato Chutney
Ingredients
Mustard oil / Sarso ka tel - 1 tbsp
Fennel seeds / Saunf - 1 tsp
Onion seeds / Kalonji - 1/2 tsp
Dry fenugreek seeds / Methi dana - 1/2 tsp
Dry red chilli / Sukhi lal mirchi - 2
Tomato / Tamatar - 2 Chopped
Turmeric powder / Haldi powder - 1 tsp
Salt - As per taste
Sugar - 3 tsp
Aam papad - 4 to 5 Small pieces
Dates / Khajoor - 4 to 5 Pieces finely chopped
Cashew / Kaju - 6 to 7
Raisin / Kismish - 8 to 10
tsp = teaspoon
tbsp = tablespoon
Instructions
Heat oil in a pan. Add fennel seeds, onion seeds, dry fenugreek seeds, dry red chilli, and tomato. Mix well.
Then add turmeric powder and salt. Mix well. Cover the pan with a lid and saute it for 5 to 6 minutes on low flame until the tomato becomes soft.
Now add sugar and mix well. Keep stirring continuously till the sugar melts.
Then add aam papad, dates, cashew, and raisin. Mix well. Once it becomes a medium thick turn off the flame.
'Dry Fruits Tomato Chutney' is ready to be served.
