   • How To Sharpen A Knife  

In todays video we'll be thinning out two knives, one with a defined shinogi line (where the knife starts to bevel in towards the cutting edge) and a more convex polished knife with no visible shinogi, and giving you 4 tips to get you started!

As this is a few hours worth of work we'll be cutting out some of the grunt work and showing you where we're at every few passes, and assess the issues as the come up. We'll discuss the things that need to be addressed right away, and the things that will work themselves out over time that shouldn't be worried about right away as chasing perfection will can sometimes just cause more issues!
