Ingredients:

Sauce:
¼ C chicken or veg stock, or water
¼ C coconut aminos (or soy sauce)
2T wine (optional)
1 T maple syrup or honey
2 tsp sesame oil
1T garlic
1T ginger
1 tsp vinegar (rice wine would be great)
2-3 limes, juiced

Stir fry:
Neutral oil for cooking chicken
1-2lbs to however many boneless chicken thighs, cut into pieces
Combo of veggies; we used 2 bell peppers, 2 carrots, 1 yellow onion, 2 broccoli stalks
Optional: can of baby corn, can of water chestnuts
Garlic (2-ifinity T)
Ginger (1-2T)

Garnish:
Sesame seeds, green onion, parsley, or even peanuts

Method:
- Whisk together sauce ingredients, set aside.
- Heat oil in a large pan or wok; add chicken, spice with S&P and whatever else you want, cook until browned. Remove.
- Add more oil (a T or two), stir fry veg.
- Add chicken back in, add garlic and ginger. Stir fry for a minute.
- Add stir fry sauce, mix and cook until slightly reduced and everything’s as done as you like it.
- Serve over rice with garnish.
