INGREDIENTS:

(This dish is best served cold. Let it sit for a few hours in the fridge before serving for best results.)

* 6 green, unripe bananas (not plantains)
* 1/2 cup light olive oil
* 2 tbsp white vinegar
* 1 white onion, sliced
* Pimientos & Spanish olives (or ‘alcaparrado’)
* 2 large bay leaves
* 1/4 tsp garlic powder
* dried oregano to taste
* salt to taste
* black pepper to taste
