This Salted Egg Chicken-Wings recipe is a deliciously interesting crispy chicken dish that’s made of chicken wings marinated with calamansi juice, salt, pepper, garlic powder, and paprika. Coated in a breading of all purpose flour, cornstarch, salt, pepper, garlic powder, and paprika. Fried till golden before mixing in a spicy salty rich sauce of salted egg yolks, butter, garlic, chillies, evaporated milk, and a bit of sugar.

INGREDIENTS:
500grams chicken wings
2 teaspoon calamansi juice (or lemon juice)
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika

FOR BREADING
1/2 cup all purpose flour
1/2 cup cornstarch
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika

SALTED EGG SAUCE
3 tablespoon butter
2 cloves garlic
1 red chili
3 salted eggyolks (mashed)
1/3 cup evaporated milk
sugar to taste (optional)

Steps:

To prepare the chicken wings; place in a bowl with calamansi juice, salt, pepper, garlic powder, and paprika. Mix well and let this marinade for at least 30 minutes.
Prepare the breading; in a container. Mix together all purpose flour, cornstarch, salt, pepper, garlic powder, and paprika.
Coat the chicken in the breading. Before placing this in a pan at medium heat, filled with enough oil for frying. Fry for 12 minutes, flipping often till the chickens are golden.
Let this rest for 10 minutes. Before frying these again for 2 – 3 minutes. Set aside.
For the sauce; crack the egg and take out the yolks. Place these in a bowl and set aside. In a new pan, melt the butter and cook in the garlic, chillies, and mashed egg yolks. Pour in the evaporated milk, cooking for a minute before adding some sugar (optional).
Once the sauce is simmering; add in the fried chicken wings and mix till these are well coated with the sauce. Take these out of the pan and serve.
