Homemade Essentials: Easy Heavy Cream, Sweetened Condensed Milk & Evaporated Milk

HEAVY CREAM:
3/4 cup whole milk
1/4 cup butter, melted
Let the milk sit out and come to room temp. Slowly whisk in the melted butter for about 30 seconds. Let sit on counter to cool and then store in the fridge. Shake before using.

SWEETENED CONDENSED MILK:
2 1/2 cups milk
1 1/4 cups sugar
Add your milk to the pot and then whisk in the sugar. Heat on a medium heat until the sugar is melted. Reduce heat to a simmer and simmer, stirring frequently to make sure the bottom doesn't stick or burn, for about 30-45 minutes. It will reduce and thicken up. You should also see it turning a pale yellow color. Pour into a jar/container. Let it sit on counter to cool down. It will thicken as it sits. Store in the fridge.

EVAPORATED MILK:
2 cups milk
Add your milk to a pot. Heat on medium low until you start to see bubbles on the edges. Reduce to a simmer and simmer for about 30-45 minutes. You will need to stir very frequently to prevent scorching and burning. It will reduce by half. I strain mine using a canning funnel and fine strainer. Let it cool down completely on the counter and then store in the fridge.
