Sambal Dabu-Dabu merupakan sambal yang berasal dari Manado, Sulawesi Utara. Sambal ini cukup unik karena tidak diulek, melainkan hanya dengan mengiris kecil-kecil semua bahan. Rasanya yang pedas dan segar cocok sekali dinikmati bersama ikan bakar, ikan goreng, atau hidangan seafood lainnya. Belum lengkap rasanya kalau hobby di dapur namun belum pernah membuat sambal Dabu-Dabu.

Resep Ikan Dori Sambal Dabu-dabu

Bahan Sambal Dabu-dabu:
2 tomat merah
2 tomat hijau
5 siung bawang merah
5-10 cabai rawit merah
2 jeruk nipis
1 sdt garam
2 sdt gula
¼ sdt kaldu jamur
50 ml minyak goreng

Bahan lainnya:
2 ikan dori fillet
2 sdm tepung terigu
2 sdm minyak goreng

Langkah:
1. Keringkan ikan dori menggunakan tisu, lumuri dengan tepung terigu
2. Panaskan minyak, pan seared kedua sisi ikan hingga matang
3. Potong dadu tomat merah dan tomat hijau yang dibuang bijinya, iris bawang merah dan cabai rawit merah masukkan ke dalam mangkuk
4. Bumbui dengan garam, gula, kaldu jamur, jeruk nipis dan siram dengan minyak panas, aduk rata
5. Sajikan Ikan Dori dengan Sambal Dabu-Dabu di atasnya

Dabu-Dabu Sambal is one of the most popular sambal creations from Manado, North Sulawesi. This Sambal is quite unique because the ingredients are not blended but sliced into small pieces. The spiciness and tartness of this Sambal match well with grilled fish, fried fish, and other seafood dishes. Your passion in cooking is just not complete if you haven’t tried to maks this Dabu-Dabu Sambal.

Dory with Dabu-Dabu Sambal Recipe

Dabu-Dabu Sambal ingredients:
2 red tomatoes
2 green tomatoes
5 shallots
5-10 bird's eye chili
2 limes
1 tsp salt
2 tsp sugar
1/4 tsp mushroom stock powder
50 ml cooking oil

Other ingredients:
2 Dory fillets
2 tbsp flour
2 tbsp cooking oil

Steps:
1. Dry the Dory with paper towel and sprinkle with flour.
2. Heat the oil and pan-sear both sides of the fish until cooked.
3. Dice the red and green tomatoes, core removed. Slice the shallots and bird’s eye chili and add them into a bowl.
4. Season with salt, sugar, mushroom stock, lime, and pour hot oil into the mixture. Mix well.
5. Serve the Dory with Dabu-Dabu Sambal on top.
