Biasanya mengolah ikan dori dengan cara digoreng. Ternyata ikan dori bisa divariasikan dengan cara lain seperti dibuat Sup Ikan Singapore. Bahan utamanya ikan putih, timun, susu, dan rempah-rempah. Seperti di Singapore, sup ini terdiri dari ikan yang dibalut tepung dan digoreng, ada juga yang langsung direbus. Tentunya sehat dan juga bergizi. Cocok disantap bersama keluarga di rumah.

Resep Sup Ikan Singapore

Bahan marinasi:
2 slices ikan dori
1 sdm minyak wijen
1 sdt garam
1 sdt merica

Bahan adonan:
2 butir telur
3,5 sdm tepung protein sedang
1 sdt garam
½ sdt merica

Bahan lainnya:
5 siung bawang putih
5 timun ukuran sedang
Jahe ukuran 2 jempol
2 batang daun bawang
2 sdm kecap asin
1 sdm kecap ikan
80-100 ml evaporated milk (susu evaporasi)
500-600 ml air
2-3 sdt garam
½ sdt merica
1 sdm gula
Penyedap sesuai selera

Langkah:
1. Potong ikan dori agak tipis, masukkan dalam wadah
2. Bumbui dengan garam, merica, dan minyak wijen. Aduk rata lalu diamkan agar bumbu meresap
3. Kupas timun lalu potong-potong miring
4. Iris tipis jahe
5. Geprek bawang putih, lalu kupas kulitnya
6. Potong daun bawang
7. Panaskan pan, masukkan sedikit minyak, tumis bawang putih hingga kecokelatan
8. Masukkan timun, masak sebentar
9. Didihkan air, masukkan tumis bawang putih dan timun ke dalamnya
10. Buat adonan pelapis, kocok telur, tepung terigu, garam, dan merica
11. Campurkan setengah ikan dengan adonan lalu goreng hingga keemasan
12. Bumbui kuah dengan garam, merica, gula, penyedap, kecap asin dan kecap ikan
13. Masukkan daun bawang dan jahe
14. Masukkan satu per satu sisa ikan
15. Tambahkan evaporated milk, masak hingga ikan matang
16. Sup Ikan Singapore siap disajikan

Singaporean Fish Soup Recipe

Marinade:
2 slices Dory
1 tbsp sesame oil
1 tsp salt
1 tsp pepper

Batter:
2 eggs
3.5 tbsp medium-protein flour
1 tsp salt
1/2 tsp pepper

Other ingredients:
5 cloves garlic
5 medium-sized cucumber
2 4" ginger
2 leeks
2 tbsp soy sauce
1 tbsp fish sauce
80-100 ml evaporated milk
2-3 tsp salt
1/2 tsp pepper
1 tbsp sugar
Flavor enhancers to taste

Steps:
1. Slice Dory slightly thinly and put into a bowl.
2. Season with salt, pepper, and sesame oil. Mix well and let sit until marinade is absorbed.
3. Peel the cucumbers and slice diagonally.
4. Slice the ginger thinly.
5. Pound the garlic and peel.
6. Chop the leeks.
7. Heat the pan, add a bit of oil and sauté garlic until browned.
8. Add the cucumber and cook for a bit.
9. Boil some water. Add the sautéed garlic and cucumber into the water.
10. Make the batter. Beat the eggs, then add flour, salt, and pepper.
11. Coat half the fish with the batter and fry until golden brown.
12. Season the broth with salt, pepper, sugar, flavor enhancers, and fish sauce.
13. Add leeks and ginger.
14. Put the raw fish in one-by-one.
15. Add the evaporated milk and cook until the fish is done.
16. Singaporean Fish Soup is ready to serve.
