Ingredients

For the Dosa Batter

Parrys Kodo Millet
Urad Dal
Poha
Fenugreek Seeds
Salt
Water

For the Potato Masala

Oil
Chana Dal
Urad Dal
Mustard Seeds
Cumin Seeds
Hing
Onions
Ginger
Green Chillies
Curry Leaves
Tomatoes
Salt
Turmeric Powder
Boiled Potatoes
Water
Chopped Coriander Leaves

For the Kodo Millet Masala Dosa

Dosa batter
Potato Masala
Ghee

METHOD

To prepare the dosa batter

1. Wash the Parrys Kodo millet, urad dal, poha and fenugreek seeds well.
2. Put them together in a large bowl and soak for 6 hours in water.
3. After 6 hours, strain off the water and transfer the soaked ingredients to a mixer jar.
4. Grind it all to a fine/smooth batter by adding a little water.
5. Once done, transfer the batter to a bowl and ferment it for 8 hours/overnight.
6. Add salt per taste to the fermented batter and gently mix it.
7. Keep the batter aside.

To make the potato masala

8. Take a wide pan and add oil. Heat it.
9. Add chana dal, urad dal, mustard seeds and cumin seeds.
10. Once the mustard seeds start splattering, add hing and finely chopped onions.
11. Also add finely chopped ginger, green chillies and curry leaves.
12. Saute for about a minute and add finely chopped tomatoes.
13. Add salt and turmeric powder. Mix and cook for 3-4 minutes to make sure the tomatoes are soft and mushy.
14. Then add the boiled potato pieces and mix well.
15. Mash everything together to a soft mixture and add a little water.
16. Mix well and cook the masala until it is thick and nice.
17. Finally add the finely chopped coriander leaves, mix and turn off the heat.
18. Keep the potato masala aside.

To make the Kodo Millet Masala Dosa

19. Heat a tawa and pour a ladle of the prepared Kodo Millet batter on it.
20. Gently spread it and pour some ghee on the edges.
21. Once the dosa is cooked on one side, flip it to the other side and cook well.
22. Flip the dosa back and place the masala in the center.
23. Gently spread the masala with a spoon and fold the dosa in the middle.
24. Serve it hot with any chutney of your choice and sambar by the side.

This video consists of preparation of the dosa batter from scratch, preparation of the potato masala and making a nice dosa with kodo millet dosa batter and potato masala. You can enjoy these dosas hot with any chutney of your choice by the side and some sambar.
