Ingredients for Chicken Pulao:

1 kg chicken with bone (biryani cut)
600 gms basmati rice

For marinating the chicken:
1 kg chicken
2 tbsp ginger garlic paste
Salt to taste

Whole Spices:
4-5 cardamom
2 black cardamom
1 javitri
4-5 cloves
1 inch cinnamon
7-8 peppercorns
2 bay leaf

Other Ingredients:
3 tbsp oil
2 tbsp butter/ghee
8 green chilli
3 large (300 gms)- sliced onion
¾ tsp garam masala
Salt to taste
1 liter water
½ cup fresh coriander

Preparation:
Marinate the chicken pieces with the items mentioned and keep aside for 30 minutes.
Wash basmati rice 2-3 times and soak it for 30 minutes.
Slice the onions, slit the green chillies and chop the coriander leaves.

Process:
1. Heat oil & butter/ghee in a pressure cooker and add the whole spices.
Once it splutters, add the sliced onions and fry on medium heat for 10 minutes till light brown in color.

2. Add the marinated chicken, cook on high heat for around 2-3 minutes. Mix and continue to cook on medium heat for around 6-7 minutes. After that cover the cooker and let the chicken cook on low heat for 6-7 minutes.

3. After opening cover add slit green chilli and garam masala. Mix well and cook for a minute.

4. Add salt to taste, water and fresh coriander leaves. Mix it well.

5. Add soaked basmati rice. Mix it well with light hands. Make sure while mixing the rice should not break.

6. Check for salt and spices. If needed please add it.

7. Once the boil come, cover the cooker lead and cook till 2 whistle on high heat.

8. After 2 whistles, rest the cooker aside for 5 minutes.

9. After that, remove the steam from cooker.

10. Open the cooker cover carefully.
