Let's enjoy the delicious, easy to make Thanksgiving breads. They are one of the best homemade breads or dumpling. Two of them are No-Knead breads and one of them is kneaded corn bread or dombolo or jeqe. Choose your favorite or prepare all of them and allow your family or guests to make their choices. You may replace some ingredients and make it your own recipe. Enjoy!

BACON SPINACH STEAMED BREAD OR DUMPLINGS

These are a soft and fluffy crust little breads. They are moist and they stay fresh for longer. They are light, glossy with elastic crust. They are tender and easily digestible.
Some steamed bread are not cooked with oil or fat except for greasing the mug to avoid sticking. This makes their cooking faster. Also there's a saying that the fresher the food the faster it cooks.
For fluffy results, the flour has been made airy by whisking it before scooping it and sifted into the kneading bowl. For accurate measurements, use a different utensil and not the measuring cup to scoop the flour and flatten or level the flour with a flat utensil.

These breads are healthy due to minerals and vitamins in the vegetables. These nutrients are kept intact through steaming the bread.
This steamed bread is packed with taste that you can eat it as is. It is a meal in itself. It is best served warm.

Three cups of flour yielded 4 cups of steamed bread though the fourth cup was not shown due to a pot being small to accommodate all of them. It is 5 servings but that depends on the size of your servings. Enjoy!!

INGREDIENTS

3 cups bread flour
3 tsp baking powder
Salt to taste
4 tbsp sugar (may adjust to your liking)
1 tbsp garlic powder
1/4 cup worth of butternut
1/4 cup worth of baby spinach OR any kind of soft spinach
4 rashers of bacon -optional
250ml water for mixing

3 tbsp butter or oil for greasing the mugs
Boiling water to steam, must be quarter or half on the mug so it does not get inside. You may top up if it gets dry.
Make sure that the steaming water doesn't enter the cups with bread dough

NO-KNEAD CORNBREAD
This quick, easy, delicious cornbread is tasty, mouthful, full of flavor, and moist. The moisture is due to using buttermilk or amasi instead of milk. Instead of using a normal skillet or baking pan, a cast iron pot has been used. Cast iron was used so that heat can transfer equally and be retained. A cast iron skillet it will do great as well.

This bread is versatile. It can be served with a variety of main dishes, soups and or salads, barbecue (braai), stews and can be served as a side too. It can be served at tea-time as well. Due to being dense, yet crispy and crumbly you will be tempted to keep snacking on it and it is filling. It is best served hot, so you can just pop it in the microwave or oven for few minutes.

INGREDIENTS

1 cup All Purpose Flour (APF)
1 cup corn meal or polenta
2 tsp baking powder
1 1/4 cup buttermilk
1 tsp salt
1/3 cup sugar
2 eggs
3 tbsp melted unsalted butter (for batter mixing)
5 tbsp melted unsalted butter (left in the cast iron for baking)

NO-KNEAD BACON CHEESE SWEETCORN BREAD

This is a creamy, rich, delicious sweetcorn bread. It is easy to prepare, just stir the ingredients together and bake. It brings so much-needed savory goodness to the gathering or your breakfast, lunch, dinner, or even snack time. You can enjoy it as is or with a rich stew, soup, salads and so on. It is versatile to include it in your menu. Try it and enjoy!

INGREDIENTS

Dry ingredients:
2 1/2 cups cake flour
2 tsp baking powder
1 tbsp sugar
1/2 tsp salt -Optional
410g kernel corn
200g bacon, chopped
1 cup or 250ml worth cheddar cheese

200g cream-style sweetcorn, can

Wet ingredients:
4 large eggs
1 cup, 250ml buttermilk
1/2 cup, 125ml butter, melted
