$3自製泰式甜雞醬

材料：
辣椒仔8隻
蒜頭1個 （12粒）
乾蔥頭2大粒
攪拌器

處理：
1. 蒜頭，去皮，清水洗乾淨，放攪拌器內。
2. 辣椒仔，去椗，切粒，放攪拌器內。
3. 乾蔥頭，去皮，放攪拌器內。
4. 攪碎所有材料。

烹調：
1. 白鑊，慢火，加入所有材料。
2. 加入清水400毫升，大火滾起。
3. 加入調味料：
a. 白醋100毫升
b. 糖3湯匙
c. 魚露2湯匙
攪勻，加入清水100毫升，大火滾起，試一試味。
4. 加入糖1湯匙，大火滾起。
5. 加入稠厚的生粉芡，攪勻。
6. 倒入大杯內，攤凍。
7. 倒入玻璃樽內，蓋好。
8. 放入雪櫃內儲存。
9. 完成。

另外，可以做個微辣的甜雞醬。

材料：
辣椒仔3隻

調味料：
糖4湯匙半
白醋135毫升
魚露3湯匙
茄汁2湯匙
生粉2湯匙半

處理過程及烹調方法與上述相同。

$3 Homemade sweet chili sauce for chicken in Thai style

Ingredients:
Chili 8 Nos.
Garlics 1 big cube (12 Nos.)
Shallots 2 Nos.
Blender

Preparation:
1. Garlics, get them peeled. Rinse with tap water. Put in the blender.
2. Chili, cut the anchors. Dice in cubes. Put in the blender.
3. Shallots, get them peeled. Put in the blender.
4. Blend all the ingredients.

Steps:
1. Plain wok, low flame, add in all the ingredients.
2. Add in 400ml of water. Heat up at high flame.
3. Add seasoning:
a. White vinegar 100ml
b. Sugar 3 tbsp
c. Fish sauce 2 tbsp
Mix well. Add in 100ml of water. Heat up at high flame. Check the taste.
4. Add in 1 tbsp of sugar, heat up at high flame.
5. Add in thick tapioca sauce, mix well.
6. Pour into a big cup and wait for cooling down.
7. Pour into a glass bottle. Cover it up properly.
8. Store in refrigerator.
9. Complete.

A mild sweet chili sauce can be made.

Ingredients:
Chili 3 Nos.
Garlics 1 big cube (12 Nos.)
Shallots 3 big Nos.

Seasoning:
Sugar 4.5 tbsp
White vinegar 135ml
Fish sauce 3 tbsp
Tomato ketchup 2 tbsp
Tapioca starch 2.5 tbsp

Preparation and Steps are the same as above.
