Ingredients:

Oil
Black mustard seeds and cumin seeds (jeera)
Fresh methi (fenugreek) leaves
Finely chopped onions
Turmeric powder
Chopped tomatoes
Red chili powder
Salt
1 raw egg (break into the curry)
5 boiled eggs
Garam masala and fresh coriander leaves for garnish
Process:

Begin by boiling the eggs for 15-20 minutes. Once done, set them aside.
Heat oil in a pan and add mustard seeds and cumin seeds.
Add methi leaves and finely chopped onions. Cook until the onions turn light brown, removing the raw smell.
Add turmeric, chopped tomatoes, red chili powder, and salt. Stir well and let the mixture cook until the tomatoes soften.
Break 1 raw egg into the curry and mix it well.
Add the boiled eggs and let them simmer in the curry for a few minutes.
Finish off with garam masala and garnish with fresh coriander leaves.


Note
Adjust the amount of oil, salt, turmeric powder, chili powder, and water based on your taste and preference.
Adjust the number of raw eggs as needed for a richer curry.
Be careful not to overcook the eggs, ensuring they don't dry out.
