Ingredients:
Oil
Mustard seeds and cumin seeds (jeera)
Chopped garlic
Curry leaves
Finely chopped onions
Turmeric powder
Chopped tomatoes
Red chili powder (adjust to taste)
Salt (adjust to taste)
Raw eggs
Boiled eggs (cooked for 15-20 minutes, peeled)
A small amount of water
Garam masala
Fresh coriander leaves for garnish

Preparation:
Boil the Eggs: Place eggs in boiling water and cook for 15-20 minutes. Once done, let them cool and peel.

Cooking Process:
Heat oil in a pan and add mustard and cumin seeds until they splutter.
Add chopped garlic and curry leaves, followed by onions. Sauté until the onions turn light brown, which helps remove any raw smell.
Add a pinch of turmeric powder and stir in the chopped tomatoes, cooking until they soften.
Season with red chili powder and salt as per your preference.
Break one raw egg directly into the pan and mix. Add the boiled eggs and a splash of water to adjust consistency.
Add garam masala, mix well, and garnish with fresh coriander leaves before serving.

Note:
Adjust salt and chili powder to taste.
Allow onions to turn light brown to enhance the flavor of the curry.
