Ginger, Turmeric & Tamarind have powerful anti-aging, anti-cancer and anti-inflammatory properties that help relieve pain & boost your health and treat a wide range of health issues. This recipe will make a tasty probiotic tonic drink before meals, start out slow with small amounts (2tbsp) to test it out if you are prone to digestive sensitivities.
Ingredients:
• 4-5 inches turmeric root (chop or coarsely grated)
• 2 inches ginger root (chop or coarsely grated)
• 5-7 tamarind pods or 2 tbsp. wet tamarind (sweet and sour flavor)
• 1 tsp black pepper**
• 1/2 cup sugar (feed bacteria)
• 1/2 cup ginger bug
• 2 quarts water (8 cups) (chlorine free)
• Optional: Sweetener of your choice; raw honey or stevia after done fermenting
Instructions:
1. Bring 2 cups of water to boil. Turn off the heat
2. Add the ginger, turmeric, clean wet tamarind, black pepper and sugar. Steep with the lid on, let it cool completely (covering with a lid prevents the oils and medicinal compounds escaping through the steam).
3. Transfer the mixture to the jar big enough to ferment.
4. Add the rest of water, ginger bug.
5. Cover with coffee filter, leaving 1-2 inch of head space. Don’t forget to feed your ginger bug before placing into refrigerator
6. Ferment at room temperature for 1-2 days, stir the jar 2 times/day to protect from mold.
7. It will become bubbly and sourer the longer it sits for fermentation. This depends on what level of sour you enjoy. For myself, day 2 is good.
8. Strain mixture and add sweetener of your choice
9. Fill up your bottles 2/3 full to allow room for gas expansion.
10. Let them sit at room temperature to carbonate for 1-2 days until it reaches your fizzy level. If you don’t want fizzy, at this point transfer to the fridge to slow fermentation. They will keep in the fridge up to 1 month. Serve chilled. Enjoy!!!
Temperature here around 70 f or 21 c
A cooler room will slow fermentation while a warmer room will speed it up.
