Kosha Echor (Bengali-Style Spiced Raw Jackfruit Curry)

Echor Kosha - Bengali Jackfruit Curry

Yes, we Bengalis love our mutton and fish. But our veg dishes? Too underrated. Too good 😊

This is Echor Kosha - a dish so rich, so bold in flavour, so satisfying, it could easily be mistaken for mutton kosha… and yet, there’s not a single shred of meat in sight.

That’s why we call it gaach patha (meaning mutton of the trees) 🤪. It’s got that same satisfaction, that same richness.

Cooked low and slow till every piece is bursting with flavour, this dish is proof that Bengali veg dishes are full of depth.

And the best part? It goes with everything. Hot rice, soft rotis, even luchi!

So if you’ve never had jackfruit like this, you’re missing out on a whole genre of flavour.

Recipe:

Ingredients
• 750g raw jackfruit (echor), peeled, washed, cut into medium chunks
• 2 large potatoes, peeled and cubed (1½ inch pieces)
• 1 tsp turmeric (divided)
• 1 tsp salt (for boiling)
• ⅓ cup mustard oil
• 3–4 cloves
• 3–4 green cardamoms
• 1-inch cinnamon stick
• 2 bay leaves
• 2 dried red chilies
• 2–3 medium onions, finely sliced
• 2 tbsp ginger-garlic paste
• 3–4 green chilies, slit
• 2 medium tomatoes, chopped
• 1 tsp jeera (cumin) powder
• 1 tsp coriander powder
• 1 tsp red chili powder
• ½ tsp turmeric powder
• 1 tsp garam masala
• 1 tsp sugar
• Salt to taste
• 1 cup water

Method
1. Pressure cook the jackfruit with 1 tsp turmeric and 1 tsp salt for 2 whistles. Let cool and set aside.
2. In a kadhai, heat mustard oil and shallow-fry the potato cubes with a pinch of turmeric and salt until golden and half-cooked. Remove and set aside.
3. In the same oil, temper with whole garam masala (cloves, cardamom, cinnamon), bay leaves, and red chilies.
4. Add sliced onions and sauté until golden brown.
5. Add ginger-garlic paste and green chilies; cook until fragrant.
6. Add chopped tomatoes and cook until soft and oil begins to separate.
7. Add boiled jackfruit and fried potatoes along with the powdered spices, sugar, and salt.
8. Mix well and bhuno/kosha on medium heat till the masala coats everything and the oil starts to release.
9. Add 1 cup water, cover, and simmer on low flame until everything is tender and the curry is rich and thick.
10. Serve hot with rice, pulao, or luchi.
