Using a wet salt solution to brine cure meat can take up quite a lot of space especially if your cut of meat or joint is a large one. If on the other hand you have some small cuts of meat to cure, brining with salt in a bag is a great option as it can save you loads of space in your fridge. There is also less chance of a spill. In this video I show you how easy this is to do. For this example, I’m brining a couple of 1Kg Ham Hocks.
