Hello there, Wonderful people :)
In case you wanted more 'No Coconut Curries' here is another option for you! This Goan Red Beef Curry is a favourite in our home— its aroma is simply able to draw anyone's attention! The beautiful balance of spice and tang is just lip-smacking. This Red Curry Paste (though best with beef) can also work with other meats.
The paste can be prepared and refrigerated for later use; can last for a month or two.

This Red Curry Paste, the Recheado paste and the Ambot-tik are nearly perpetual members in my fridge— great for quick meal fixing :D

Ingredients:
500 grams Beef, cut into pieces
1 teaspoon Salt
2" piece of Ginger, crushed
1 whole Line

For the Red Curry Paste:
1 teaspoon Cumin Seeds
6 Cloves
12 Black Peppercorns
1/4 teaspoon Turmeric powder
2" Cinnamon
6 Garlic cloves
1" Ginger
8 Dried Kashmiri Chillies
Water, as needed

3-4 Tablespoons Oil
1 large Onion, finely sliced and halved
1 Green Chilli, slit
1 large Tomato, finely chopped
1 large Potato, diced
Approx 1/4 Cup Tamarind Juice (lime-sized portion)
Hot water, to adjust consistency
Salt to taste
1/2 teaspoon Sugar
Finely chopped Coriander


The process of water-on-lid cooking helps cook the meat slowly, but effectively, without needing to add more water to the meat itself. The water within (given out by the meat) starts to evaporate, and the vapours reach the lid. The lid with water on the top, helps condense the inner vapours quickly and the condensation drips back into the vessel. Also, the water on the lid adds weight building the pressure within the vessel, thereby cooking the meat at a higher temperature (as seen in a pressure cooker, just not as quickly)
