Today is an overwhelmingly productive day on the farm! I am sitting in the middle of a literal mountain of fresh Chayotes. This season, the vines have been incredibly generous, producing thousands of giant, green chayote squashes that cover the ground as far as the eye can see.

Join me as I harvest these beautiful, organic vegetables under the bright blue sky. Each chayote is perfectly firm, crunchy, and ready for the kitchen. Once the harvest is piled up, I’ll be sorting through them to Sell at the Local Market. Fresh chayote is a versatile favorite for soups and stir-fries, and my customers are always waiting for this high-quality batch!
