Pastéis de Bacalhau
(Salted Cod Fritters)
Yield: 4-6| 3 hours

Ingredients
Salted Cod | 2 pounds rehydrated
Potatoes | 6 skinned
Parsley | 1 fresh bushel
Bread Crumbs | ½ cup
Eggs | 3
Vegetable Oil | 3-5 cups

Instructions
1. In a large pot, boil salted cod for 1 hour. Then remove from liquid and separate the meat from the bones. Save liquid.

2. Boil potatoes in the same liquid for 30 minutes and then drain. Mash potatoes and use electric beaters to blend into a smooth consistency.

3. Mash the cod meat well to where it begins to spread. Add chopped parsley and mix well.

4. Mix the cod and potatoes 50/50. Add eggs and mix well until it becomes a dough that is bonded.

5. Using two spoons, form the mixture to create smooth oval fritters. Put on a sheet pan with a thin layer of bread crumbs. Gently roll the fritters on the bread crumbs.

6. Fry in very hot oil 375-degree oil for 5-7 minutes. Turn pasties to fry on both sides to get a nice golden brown color. Drain on a plate with paper towel to absorb excess oil.

7. Serve immediately with lemon and enjoy!
