Welcome on board to our culinary trip to the North-West Region of Cameroon, specifically the Bafut tribe.

Achu is the traditional dish of the Bafut people, as well as that of other tribes within the region, which share a similar cultural heritage with them.

Over the years, this delicacy has gradually made it's way into the hearts of many in and out of the country...kind of viral I'd say. Achu is an excellent example of how food can unite people of different origins.

Ingredients:

For the soup
Meat Kanda (cow skin/hide)
Towel (tripe)
3 L broth
2 cups palm oil
4 tbsp achu spices
Salt, pepper & seasoning cubes

Method 1 = 2-3 tbsp kañwa/potash depending on the strength Method 2 = 2 tsp baking soda/bicarbonate

Options for the fufu
Fresh cocoyams (Igbo coco)
Cocoyam flour

Note: Green bananas can be cooked, pounded along with the cocoyams. This is usually to add texture or stabilise the cocoyams, especially if they're soft
