INGREDIENTS

2 eggs separated
1/4 cup sugar
250-275 g mascarpone cheese
1 cup whipping cream
ladyfingers
cocoa powder for dustin
STRONG coffee
*optional 2-3 tablespoons of Amaretto or Rum

METHOD

1. Separate egg yolks from egg whites. In the bowl of your electric stand mixer, or in a large bowl using a handheld mixer, whisk egg whites until stiff peaks form (approx. 3-5 minutes). Set aside.

2. Whisk whipping cream until stiff peaks form. Set aside.

3. In a shallow bowl, brew strong coffee and add 2-3 table spoons of liqueur. Set aside and let cool.

4. Mix your egg yolks and sugar together until the mixture goes pale and thick. Add mascarpone cheese and beat until combined.

5. Using a spatula, gently fold whipped cream into egg, sugar & mascarpone mixture. Then, gently fold in beaten egg whites until everything is combined. When folding in the ingredients, be sure to retain as much air in your cream as possible.

6. Briefly dip the sponge side of the lady fingers into your coffee mix, leaving the sugar side dry. Line the bottom of your tray with lady fingers, and top with half of the mascarpone cream. Repeat.

7. Refrigerate for at least 2 hours, but ideally for 24 hours.

8. Dust with cocoa powder before serving!
