To Make Dough

Maida / All Purpose Flour - 1 Cup
Baking Soda - 1/4 Tsp
Ghee - 2 Tbsp
Water

To Make Sugar Syrup

Sugar - 1 Cup
Water - 1 Cup
Cardamom Powder - 4 Nos
Drops Of Lemon

Method:

1. Take maida, baking soda, ghee in a bowl and mix.
2. Gradually add water to it, mix and prepare the dough.
3. Let it rest for 20 mins.
4. Take sugar and water in a saucepan and start boiling it.
5. Add cardamom pods to the water, mix and let it boil for 5 mins. Then add in some lemon juice.
6. Once the sugar is completely dissolved and the syrup is slightly sticky, turn off the stove and keep the syrup aside.
7. Now take the rested dough, put it on the rolling surface by adding enough dusting flour and roll it out evenly as shown in the video.
8. Cut off all the uneven edges to the rolled dough and make it equal on all sides.
9. Now sprinkle a little dust on it and fold it all to one side as shown in the video.
10. Then cut the folded dough into small pieces. Keep them aside.
11. Heat oil for deep frying in a kadai and drop in the kajas gently.
12. Fry them until they are golden brown in colour on a medium low flame to make sure the kajas are all cooked inside.
13. Then remove them from the kadai and immediately put them in the sugar syrup.
14. Let the kajas soak in the sugar syrup for 10 mins and then remove them from the syrup.
15. Madatha Kajas are ready to be served.

It's festive time and we can't really do away with sweets. Here I am, with another beautiful recipe from Andhra. It's called Madatha Kaja. I've shown the typical sweet shop style mini madatha kajas. But authentic madatha kajas are usually bigger and much more juicier, it's almost like the sugar syrup dripping down every bite of it. But since we should also keep our sweet tooth under control, I thought it's best to make these kajas bite sized. I personally loved and enjoyed making them. They were so juicy and yummm.
