Orange Cranberry Muffins
Prep time- 10-15 minutes
Baking time- 20-25 minutes
Serves- 12 muffins

Ingredients:
For Muffins-
1.25 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
A pinch of salt
1 tsp fresh orange zest
1/2 cup fresh curd
1/2 cup powdered sugar
1/4 cup oil
1 tsp vanilla essence
1/2 cup fresh orange juice
2 tbsp cashew nuts, chopped
1/4 cup dried cranberries

For Streusel/ Crumble-
2 tbsp whole wheat flour
3 tbsp oats
2 tbsp sugar
2 tbsp cold butter


Instructions:
Preheat the oven at 180 degree Celsius for 10 minutes.
In a bowl, add whole wheat flour, baking powder, baking soda, salt, orange zest and cashew nuts and mix well and keep aside.
In an another bowl, add curd, sugar, oil, vanilla essence and fresh orange zest juice and mix well until it’s incorporated well.
Now add the dry ingredients to the wet ingredients and fold gently until everything is incorporated well.
Now add dried cranberries and mix well.
Take a muffin tray and line it with the muffin liners and add approximately 2 tbsp batter in each muffin cavity and keep aside.
With this measurement, you will get 12 muffins.

For Streusel/ Crumble-
Add flour, oats, sugar and cold butter in a small bowl and mix well until it’s like a crumb mixture and keep aside.

Now on each muffin, add approximately 1 tbsp streusel to each muffin and again top with few dried cranberries.
Then bake these muffins on 180 degree Celsius for approximately 20-25 minutes till the muffins are baked properly and the skewer inserted muffin comes out clean.
Serve with your favourite tea, coffee or hot cocoa and enjoy!!
