INGREDIENTS:


1.5lbs boneless chicken breast
2 tbsp olive oil
Juice of half a lime (or whole)
1/2 cup chopped onions/peppers
1 tbsp sofrito
1-2 tbsp tomato sauce
1/2 packet Sazón
1 chicken boullion
1/2 tsp all-purpose seasoning
1 bay leaf
Black pepper, to taste
Dry oregano, to taste
Enough water to cover the chicken 3/4 of the way
Cheese for filling (Monterey jack is my fav)
Empanada discs
Oil for frying (vegetable, canola, grapeseed, peanut, etc)
