Ingredients & process:
1. Sooji (semolina) : 1 and 1/2 cup
2. Ghee : 1 tbsp
Take the ghee in karai, heat it and add the semolina and fry it with low to medium. No high flame please. Ghee will increase the taste of sooji. After frying 4 to 5 minutes, take it on a plate. Now take the below ingredients in the same karai:
3. Refined oil : 3 tbsp
4. Peanuts : 1 fist
Now fry the peanuts for 2 to 3 minutes with low to medium. Keep them aside. Now add few cashews in the same oil, fry them with low flame for 2 minutes, keep them aside. Now add in the same oil:
5. Black mustard seed : 1 tsp
6. Cumin seed : 1 tsp
7. Urad dal(black lentil) : 1 tsp(not soaked)
8. Curry leaves : 15 to 20 nos
Fry them 1 to 1 and 1/2 minutes with low flame. Now add:
9. Chopped green chilli: : 5 nos , fry it for another 1 minute. Now add:
10. Chopped ginger : 1 tsp and fry it for 1/2 minute with low flame. Now add:
11. Chopped carrot : 1 nos, fry it for 1 and 1/2 minute with low flame.
Now take a separate pot and add 2 and 1/2 cup water and heat up. Now add in karai:
12. Chopped Onion : 1 nos
13. Salt : According to taste
Now add the sooji in karai, fry them with the vegetables with low flame. Now add the hot water, mix them well, add fried peanuts and cashew, cover the karai, let it boil for 2 to 3 minutes with low flame. Open the cover, stir it little bit, add chopped coriander leaves, stir more to make the sooji dry. Enjoy.
