✏️ Ingredients for 1 BRACIOLA DI COTICA DI MAIALE:
1 piece of pork skin
2-3 tsp pecorino cheese
parsley
2 cloves of garlic
salt and pepper

→ How to MAKE the braciola di cotica di maiale:
It is really easy to make, just add layers of the ingredients on the skin and roll it (IT NECESSARY TO KEEP THE FAT SIDE INSIDE THE ROLL!). Tie it tightly with a kitchen twine. And keep it in the freezer until use.

→ How to USE stuffed pork skin roll (Braciola di cotica di maiale):
You can use it in different ways. The best traditional way to cook the cotica is in a tomato sauce, cook it together with the sauce for about 1h and if it is bigger you need more time to cook it completely. You can cook it with potatoes in the oven covered by aluminum foil and with a cup or two of water. You can cook it also in a bean soup, again you need it to cook for about 1-2h.
