Soya chunks - 2 ½ cups OR 250g
Curry leaves
Grated coconut - 1 handful
Tomato - 2 large
Mustard seeds - ¾ tbsp
Cumin seeds - 2 pinches
Onion - 1 small
Garlic - 6 big cloves
Green chilly - to taste
Ginger - 1 big piece
Turmeric powder - ¼ tbsp
Coriander powder - 1 ¼ tbsp
Chilly powder -1 tbsp
Garam masala - ¼ tbsp or as per taste
Salt
Oil

Hi, today let's make an easy and very tasty soya chunks curry with thick gravy..

This curry will go well with rice or chapatis..

First, we need to prepare the soya chunks for the curry.. for that, I have boiled some water in a saucepan and I am going to add 250 gram of soya chunks into boiling water and let it boil for around 2 minutes..
After about 2 minutes, turn off the flame and let the soya chunks sit in the hot boiling water for 5 to 10 minutes until they turn really soft..
After they have turned soft, discard the water and run some plain tap water over the soya chunks and wash it really well.
After washing the soya chunks, squeeze off all the water from the soya chunks and keep it aside.
After you have squeezed off all the water add, one-and-a-half handfuls of soya chunks in the mixer grinder and crush it gently..
After crushing the soya chunks, heat some oil in a pan and roast the crushed soya chunks until they turn really crispy, along with some curry leaves.
When the crushed soya chunks turn really crispy, turn off the flame and transfer it into another plate or bowl..
Next, in the same pan, roast a handful of grated coconut until it turns brown.
After the coconut turns brown, transfer it into a mixer grinder and add 2 to 3 tablespoons of water and grind it into a fine paste.. do not add a lot of water as it will not grind well.
Next, grind two large tomatoes in a mixer grinder and make a paste out of it, and keep aside.
After you have kept all these things ready, heat a pan and add oil. When the oil heats up add ¾ tablespoons of mustard seeds and let it splutter.
After the mustard seeds splutter, add two pinches of cumin seeds into the pan and let it sautè.
Next, add in a small onion, finely chopped, along with finely chopped ginger , garlic and green chillies.
When the onion starts to change colour, and ¼ tablespoon of turmeric powder and saute until it's raw smell is gone.
Once the turmeric powder is sautèed, add 1 ¼ tablespoon of coriander powder and sautè until the raw smell goes away.
Add the spices on a very low flame only.
Add in a tablespoon of chili powder or as per taste and continue sautèing.
Once the spices are roasted really well, add the tomato paste and some salt to taste.
Next, keep it closed and cook it on a low flame until the gravy releases all its oil and cooks really well.
You may add a generous amount of oil so that all the spices and the gravy can roast well and give out a nice flavour
Next, add the soya chunks along with the coconut paste. After adding the coconut paste add enough water for the gravy and close the lid and bring it to a boil and cook it well.
After about 10 minutes on medium flame, the gravy would start turning thick.
Next add some garam masala to taste.. I am adding ¼ tbsp.
After mixing the garam masala well, add the crushed and roasted soya chunks into the curry and mix well.
Boil it for around 10 more minutes on a medium flame with the lid closed.
With this, our curry would be really thick and ready to be served!
