One of Iraq's national dishes is Quzi, also known as Oozie, which i traditionally uses slow cooked lamb. There are many variations to this dish as it spread across the Middle East.
One of the recipes is what we explored in our kitchen. Try it in your too!

Red meat boneless(Lamb/bee/veal/mutton/or even chicken) 1 lb
Oil 3 tbsp
Chopped Onion (1/2)
Ginger Paste (2 tbsp)
Garlic Paste (2 tbsp)
Cloves (4-5)
Cinnamon Stick (1 big piece)
Black cardamom pods (2)
All spice mix/7 spice mix (1 tbsp)
Coriander seeds (1 tbsp)
Bay Leave (2-3)
Salt (1 tsp for meat and 1 tsp for the rice)
Green Cardamom (3 pods)
Green Chilis (5-6)
Chopped Cilantro (1/2 bunch)
Green Peas (1/2 cup)
Carrots (chopped or slices 1/2 cup)
Rice (2 cups)
Black cumin (1tsp)
Hot water as needed
Samosa wrap or puff pastry or Phyllo
Flour mix (flour and water)
Roasted pine nuts

Heat the oil and saute the onions. Add ginger garlic paste and add the meat till nice and brown. Then add cloves, cinnamon, black and green cardamom, all spice mix, bay leaves, coriander seeds, and salt. Add enough water to cook in either a pressure cooker or traditional pot. Once the meat is cooked, add chilies, cilantro, green peas, carrots and saute till the water dries out and the veggies have also cooked. Now add the rice and water to cook the rice along with the rest of the salt and black cumins. Let cook. Once cooked bring down to room temperature.
Using a bowl to shape, layer the samosa strips and use the flour mix to bond them together or, you can also use puff pastry.
Layer the bottom with some roasted pine nuts, and fill the bowl with the rice pulao. Now cover the top with whichever form of breading you are using.
Bake for about 20 mins at 350 or until the breading is golden brown.

Serve hot.
