Ingredients for the dough:
• All Purpose Flour – 3 and ½ Cups (420 gm)
• Sugar – ¼ Cup (50 gm)
• Light Brown Sugar – ¼ Cup (50 gm)
• Unsalted Butter – 6 tbsp
• Whole Milk – 1 Cup
• Vanilla – 1 tbsp
• Large Egg – 1
• Cinnamon Powder – 1 tsp
• Nutmeg Powder – ½ tsp
• Yeast – 2 and ¼ tsp (1 packet)
• Salt – 1 tsp

Steps:
1. Warm milk until it reaches the temperature somewhere in between 110 F and 115F. If you don’t have a thermometer, just put your finger in milk and you should feel it warm but shouldn’t burn your finger.
2. Add about a tbsp of sugar and yeast milk. Mix it in and keep aside for at least 10 minutes to get the yeast activated.
3. Mix flour, both sugars, cinnamon powder, freshly grated nutmeg powder, and salt together and keep it ready.
4. Add vanilla, egg, and melted butter to the activated yeast. Give it all a good mix.
5. Mix both dry and wet ingredients together for a few minutes until a smooth dough is formed. This step can be done by hand or using a stand mixer. Dough should be smooth, soft, and tacky but not sticky.
6. Generously flour the countertop or the surface on which you will be kneading the dough.
7. Place the dough on a floured surface and sprinkle some more flour on top. Knead the dough until it comes together as a soft ball and if you press a finger into the dough, it should bounce back. It may take a few minutes of kneading to get it right.
8. Grease a bowl with a little bit of vegetable oil and place the kneaded dough in it. The oil is just to prevent the dough from sticking to the bowl.
9. Cover the bowl with plastic wrap and leave it in a warm place for an hour or two, or until the dough is doubled in its size. I usually turn the light on in my oven and keep the dough in there. This works for me every single time.

Ingredients for Cinnamon Sugar filling:
• Sugar – ¼ Cup (50 gm)
• Light Brown Sugar – ¼ Cup (50 gm)
• Cinnamon Powder – 1 tbsp
• Unsalted Butter – 4 tbsp

Steps:
1. Mix both sugar and cinnamon powder together until combined.
2. Keep the butter at room temperature so that it is soft and pliable to be applied into a thin layer on dough once rolled out.
3. One the dough is doubled in size, flour the countertop or surface again and place the dough on it.
4. Roll the dough into a big rectangle shape.
5. Apply the softened butter onto rolled dough and spread it evenly into a thin layer.
6. Spread the cinnamon sugar mixture evenly on to the buttered dough.
7. Starting from the long end of the rectangle, gently lift the dough and roll tight. Try not to have any gaps to avoid loose layers in the roll.
8. Once the dough is rolled, stretch the end a little bit, and pinch it to seal the roll.
9. Using a non-flavored dental floss or a sharp knife, cut the roll into about 2-inch pieces.
10. Grease a casserole dish with butter and arrange the pieces in it. Allow some space between them so that they can expand as they rise a second time and bake.
11. Cover them with plastic wrap and leave it in the fridge overnight (if you want to bake them for breakfast) or let them rise for a couple hours in a warm place to let them rise for a second time.
12. Bake at 350 F for about 25 to 28 minutes. At the 25-minute mark, if they are getting too much brown on top, just cover loosely with aluminum foil and continue baking for the rest of the time.

Ingredients for Cream Cheese Glaze:
• Cream Cheese – 8 Oz
• Unsalted Butter – 4 tbsp
• Vanilla – 1 tbsp
• Powdered Sugar – 2 Cups

Steps:
1. Mix room temperature softened cream cheese and butter together until they form into a fluffy paste.
2. Add vanilla and mix it again until incorporated.
3. Add sugar in small batches and mix it in until all sugar is incorporated, and a thick glaze is formed.

Assembling Cinnamon Rolls:
1. Once baked, let the Cinnamon Rolls cooldown for about 20 minutes.
2. Spoon on the thick cream cheese glaze on top of each roll and spread it. Warmness from the rolls will melt the glaze slightly and it will soak into the roll and set as they cool down.
3. Serve these Cinnamon Rolls warm either for breakfast or as a sweet treat anytime of the day. Enjoy!
