Ingredients:

Dry Ingredients:
*2 cups all-purpose flour
*1 tablespoon baking powder
*1/2 teaspoon salt
*1 tablespoon ground cinnamon

Wet Ingredients
*1 cup vegetable oil (or canola oil)
*1 cup brown sugar
*1 tablespoon vanilla extract
*3 large eggs
* 3 medium grated carrots

Optional Ingredients
*peanuts

Bake in a preheated oven at (180°C)
Baking time: 45-55 minutes, or until toothpick comes out clean.
Every oven is different, cooking times may vary slightly, keep checking it every 5 minutes after 20 minutes of baking.
