Restaurant Style Palak Paneer Recipe
Ingredients:
200 grams paneer (cubed)
300 grams spinach (palak)
2 tablespoons oil or ghee
1 teaspoon cumin seeds
1 medium onion (finely chopped)
1 medium tomato (chopped)
1 green chili (chopped, optional)
1 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon garam masala
1/2 teaspoon cumin powder
1/2 teaspoon red chili powder (optional)
Salt to taste
2-3 tablespoons fresh cream or yogurt (optional)
Water as needed
Instructions:
Blanch the Spinach:

Wash the spinach leaves thoroughly.
Boil water in a large pot, add a pinch of salt, and immerse the spinach leaves in the boiling water for about 2-3 minutes.
Remove the spinach and immediately transfer it to a bowl of ice water to retain the green color. Let it sit for a minute or two.
Drain the spinach and blend it into a smooth puree using a blender. Add a little water if needed.
Prepare the Paneer:

If you prefer crispy paneer, lightly fry the paneer cubes in a little oil until they are golden brown. This step is optional.
Cook the Base:

Heat oil or ghee in a pan over medium heat.
Add cumin seeds and let them splutter.
Add the chopped onions and sauté until they turn golden brown.
Add the ginger-garlic paste and sauté for another minute.
Add the chopped tomatoes and green chili. Cook until the tomatoes turn soft and mushy.
Add Spices:

Add turmeric powder, coriander powder, cumin powder, and red chili powder. Cook for a couple of minutes until the oil separates from the masala.
Combine Spinach and Paneer:

Add the spinach puree to the pan and mix well.
Cook for 5-7 minutes on medium heat. Add water if the gravy is too thick.
Add salt to taste.
Add the paneer cubes to the spinach gravy and mix gently.
Let it simmer for 5 minutes, allowing the paneer to soak in the flavors.
Finish the Dish:

Add garam masala and mix well.
If using, add fresh cream or yogurt and stir to combine.
Serve:

Serve hot with roti, naan, or rice.
