🔸 Ingredients & Recipe Notes:

For the Chicken:
300g (10oz) skinless, boneless chicken thighs, cut into 2.5cm (1") pieces
1 tbsp light soy sauce (or all-purpose soy sauce)
2 tsp Chinese cooking wine
2 tsp cornflour/cornstarch

Dredging:
1/2 cup cornflour/cornstarch

Batter:
6 tbsp cornflour/cornstarch
4 tbsp plain/all-purpose flour
7–8 tbsp cold soda water (NOT sparkling mineral water)
1/4 tsp baking powder (NOT baking soda)
1/4 tsp salt

Oil for Frying:
2–3 cups vegetable oil

For the Orange Chicken Sauce:
30g (2 tbsp) neutral, high smoke point oil
10g (2 cloves) garlic, grated
10g (about 1.5” piece) ginger, grated
20g (4 tbsp) scallions, thinly sliced
125g (1/2 cup) chicken stock
75g (1/4 cup) mirin
50g (3 tbsp) soy sauce
10g (2 tsp) sesame oil
50g (1/4 cup) sugar
25g (1.5 tbsp) rice vinegar
Juice of 1 large orange
1 tsp orange zest (about 8–10 zests)
5g (2 tsp) corn starch
Corn starch slurry (optional, 2g or 3/4 tsp corn starch mixed with 4g water)

For the Sticky Rice:
250g short-grain rice
