This is a standard dessert for a Swedish Christmas dinner (Julbord). It is a sticky almost-fudge-like cake. It is best served with whipped cream and jam.

Recipe: Serves 8 at least

100g (1 stick) butter
200g (1 cup) sugar
2 eggs
2t vanilla sugar
3T cocoa powder
60g (1/2 cup) flour
1/4 tsp salt

Preheat oven to 200C/400F

Grease and flour or line (with baking paper) 24cm/10 inch springform pan.

Melt butter. If you can remove from the heat just before it finishes melting that is good. Otherwise let cool slightly.

Mix dry ingredients together.

Mix in eggs so you get a sticky, uniform mass

Mix in melted butter. I do this a bit at firs, and then more so i can be sure it emulsifies well.

Pour into the springform pan.

Bake 10-15 minutes depending on desired consistency.

Serve with whipped cream and fruit preserves.
