Bitter gourd is very popular vegetable in South Asian countries, It is well known all over India as "karela" .. In Bengali we call it "uchhe".. This is a tasty way to enjoy this vegetable!!!
Ingredients :
1 Cup Potato cut into diced bite sized pieces
1 Cup Bitter Gourd (frozen)
1 bay leave
¼ Tsp Fennel seeds
¼ Tsp Fenugreek seeds
½ tsp Cumin powder
¼ tsp Coriander powder
⅛ tsp Chilli powder (according to taste)
½ Tsp Turmeric powder
½ Tsp Garam masala powder
¼ Tsp Ghee
Salt and Sugar according to taste
2 ½ Tbsp Mustard oil/ any cooking oil
