RECIPES:
Current Sandwich Bread Recipe:
1 cup warm water
2 tsp yeast
1/4 cup melted butter (plus some for brushing)
1/8 cup sugar (or honey)
1-2 tsp. salt
3 cups all purpose flour (or bread flour)
Mix water, yeast and sugar - allow to sit for 10 min or so.
In a stand mixer with a dough hook attachment add the flour, yeast mixture and butter. Mix together and knead for 10 minutes. Allow to rest and rise for 1 hour. Punch down the dough, shape into two loaves and place in well greased pans. Rise another hour covered.
Brush with butter and bake at 350 for about 35 minutes (ovens may vary).

Homemade Mayo:
1 egg yolk
1 cup avocado oil
1 tsp. lemon juice
1 tsp. vinegar
1/2 tsp salt
1 tsp. dijon mustard
Carefully place the egg yolk in the bottom of a wide mouth mason jar (do no break the yolk). Add the lemon juice, vinegar, salt, and dijon. Carefully pour over the oil. Place an immersion blender wand directly over the yolk and blend for 10-15 seconds holding in place. Once you see the bottom of the jar beginning to look white like mayo, slowly work your immersion blender up the sides of the jar to incorporate the rest of the oil into your mayo. Enjoy! I store my homemade mayo in the fridge for a week.
