DUTCH OVEN LENTILS

Eating Lentils can lower cholesterol and protect against diabetes and colon cancer. A daily dose of fiber pushes waste through your digestive system and prevents constipation, too. The potassium, folate, and iron in lentils also provide lots of benefits. Potassium counters the bad effects of salt and lowers blood pressure.
Lentils are rich in fiber, folate and potassium making them a great choice for the heart and for managing blood pressure and cholesterol. They are also a source of iron and vitamin B1 which helps maintain a steady heartbeat.
So why not eat Lentils?

INGREDIENTS
1 pound of Brown Lentils (any brand is fine)
11 ounces ham chunks
12 ounces smoked sausage cut into chunks
1 large onion
½ cup green bell pepper
½ cup chopped celery
5 toes garlic minced
1 large carrot chopped or at least 1 cup
3 Tbsp. Olive Oil. Extra virgin
8 cups chicken stock
¼ Tsp. Salt
½ Tsp. Black pepper
3 Tbsp. parsley Italian flat leaf
2 Bay leaves
1 cup elbow macaroni

INSTRUCTIONS
Heat a 7 quart Dutch oven, on medium high and add olive oil.
When you see whiffs of smoke, add in onion, bell pepper, celery, garlic and carrot.
Sprinkle a bit of salt over veggies to help them sweat.
Sauté’ for 4 minutes or until veggies begin to look soft.
Add in your ham, sausage, Lentils, bay leaves and chicken stock.
Add black pepper.
Stir, cover and simmer for 1 hour. Stir every 10 minutes to prevent bottom burn.
During the simmer, boil 1 cup of small elbow macaroni. 12 minutes or so until they are al dente.
Strain out water and reserve water and macaroni in separate bowls.
Use the pasta water if you need more water in your lentils.
When lentils have cooked for 1 hour test to make sure they are soft.
Serve Lentils over the elbow macaroni.
That’s how I do it.

Chefs Notes: You might consider a tablespoon of hot sauce in your lentils.
Also drizzle a bit of extra virgin olive oil over your own serving of Lentils.
Using elbow macaroni is optional. You certainly can eat Lentils without the additional carbs.
Meat in Lentils is used for adding flavor. You can minimize the use of meats without changing the flavor.
