I am excited to finally be back on the vlog! It has been a very long time so I do apologize for my absence family! In this vlog we are going to be cooking PĪSUA or Samoan coconut jelly. A favourite for our Samoan people!

Full Recipe

Ingredients
600g tapioca pearls
4 cups raw sugar
1 litre coconut cream
1 lemon rind
1 cup water

1. Soak tapioca pearls in water in an oven tray overnight. The next day foil the pearls and bake in an oven at 160 degrees for 90mins or until the pearls have become transparent and cooked right through.
2. Melt sugar until burning point and sugar boils/bubbles up. Move to another element on oven and once cooled add half cup water and coconut cream. Then add lemon rind. Be sure to take out lemon rind before adding to tapioca.
3. Once cooked, cool the tapioca pearls until solidified. Scoop the tapioca into a bowl and mix with the coconut sugar syrup.
4. Be sure to use the wooden spoon to break down the tapioca, mixing well.
5. Place in the fridge to set for 1hour and serve. Enjoy! (Serves 8)
