Healthy Roti Quesadillas with Beetroot Dip 🌯💜

Looking for a fun, healthy, and tasty school lunchbox idea? These Roti Quesadillas are a wholesome twist on a classic favourite! Made with whole wheat rotis, spiced paneer & veggies, and a creamy beetroot dip, they’re nutritious, tiffin-friendly, and absolutely delicious.

Perfect for kids who love cheesy bites and moms who want to pack something filling yet healthy. 🌿

🥗 Ingredients

✅ Filling
Ghee – 1 tsp
Mixed Vegetables – 1 cup
Salt – to taste
Oregano – 1 tsp
Garam Masala – ½ tsp
Red Chilli – ½ tsp
Paneer – 50 g

✅ Beetroot Dip
Boiled Beetroot – 1 cup
Green Chilli – 1
Garlic – 4 cloves
Hung Curd – 4 tbsp
Lemon Juice – 1 tbsp
Sesame Seeds – 1 tbsp
Salt – to taste
Honey – 1 tsp
Curry Leaves (optional)
Cheese – as required

🔥 Method

1️⃣ Heat ghee, add onion & vegetables, sauté for 2 mins on high flame.
2️⃣ Add spices + grated paneer, cook for 2 mins, then let it cool.
3️⃣ Blend beetroot with dip ingredients into a smooth paste.
4️⃣ Spread beetroot dip on roti, add filling, cheese, oregano & chilli flakes.
5️⃣ Toast both sides with little ghee until crispy.
6️⃣ Cool for 5–7 mins before packing to keep it from turning soggy.
