Milkfish (Bangus) is a very tasty and versatile fish, but sometimes unpleasant to eat because it is a very spiny fish, depends on how it is cooked.

Here's the best way to eat this yummy fish without worrying about the fish bones. Our Milkfish has been cooked twice in our crockpot, almost like "confit" leaving the fish meat intact and the fish bone very soft that you can basically chew and eat.

we prepared this fish well by brining it overnight to make the fish swell and dehyrated and also to remove that fishy smell and impurities.

Clean, slice and wash 2 medium sized Milkfish

Dissolve 1/2 cup of rock salt in 1.5L of water (brine)

soak sliced Milkfish to our Brining solution, for 2 hours or overnight in the fridge

wash milkfish in running tap water to wash off excess salt and impurities. Drain.

prepare our ingredients

crush 2 heads garlic
slice sweet gherkins
cut carrots to thick flowerettes
pitted and stuffed green olives
bay leaf
star anise
whole black pepper
Rock salt
fresh red chillies
3 cups olive oil
2cups of water, just enough to cover our fish

assemble

crock pot/pressure cooker

lay 1/3 part of ingredients to the bottom of your pot
arrange single layer of the milkfish
put the 2nd part of the ingredients
lay the 2nd layer of the milkfish
then put the remaining ingredients
pour olive oil then the water

set the crock pot (pressure cooker on the stove) in high heat for 1 hour. lift the valve to let the heat off.
open to check the fish when it is safe to do so, to make sure that there's enough liquid in the dish

cover and set the crockpot to low and cook for further 1 hour and 10mins.

At this point, i did not open my crockpot after an hour (because i slept😂) but our crockpot has this automatic "keep warm" feature so it was still warm when i checked it out.

And Voilah! Our super tasty and Spicy Spanish Style Milkfish is ready. It was so spicylicious!!!

Even my kids loved it because they don't need to worry about the fish bones when they eat it. They were actually amazed that they can actually eat the fishbone!😊 I am one happy and proud mom!
