Best Pistachio Cake Ever

Pistachio Cake Anyone?
Check out this moist and delicious version bursting with pistachio flavor and all you need is a hand whisk.
Ingredients:
140 g of eggs / 2 extra large eggs
60 g unsalted room temperature butter
50 g canola oil
140 g powdered sugar
90 g cake flour
20 g instant pistachio pudding powder
100 g all purpose flour
* flours should be sifted and then measured
1 tbsp rose water
1/2 tbsp vanilla extract
1 tbsp baking powder
1/4 tsp baking soda
1/4 cup sour cream or buttermilk or milk
1/2 cup 100 percent pistachio paste

Preparation:
Whisk the eggs and sugar until well incorporated. Add the oil, soft butter then the vanilla extract. Add the pistachio paste and mix. Add 1 tbsp rose water. Mix the dry ingredients including the pistachio pudding powder, baking powder and baking soda. Add to the batter and mix. Finally add the sour cream or milk and mix. Spread in a buttered floured loaf pan and bake at 350 degrees F for 40-45 minutes or until a toothpick inserted comes out clean.
Decorate the way you like, I added fresh figs on top and served with pistachio ice cream.
