Lauki ki Barfi, also known as dudhi barfi or bottle gourd fudge, is a popular Indian dessert made from grated lauki (bottle gourd), milk, sugar, and ghee, often flavored with cardamom and garnished with chopped nuts. This sweet is known for its soft, moist texture and mild sweetness, making it a lighter alternative to more intensely flavored Indian desserts. It is commonly prepared during festivals, celebrations, or special occasions like Diwali and Navratri.

Ingredients Quantity
Bottle gourd 1 no
Water as required
Ghee 2 tbsp
Almonds sliced 1 tbsp
Cashew nuts chopped 1 tbsp
Raisins 1 tbsp
Milk ½ litre
Khas syrup 1 cup
Khoya 1 cup
Pistachio powder 2 tbsp
Green cardamom powder 1 tsp
Ghee for greasing
Pistachio chopped 1 tbsp

Method :-

1. Take a bottle gourd and peel them well.
2. Place a pan on medium flame and boil water.
3. Take a peeled bottle gourd and grate it in a pan boil for 5 minutes.
4. Strain the boiled bottle gourd and Squeeze out any excess water to avoid a watery mixture during cooking.
5. Place a kadai on medium flame and heat ghee.
6. Add sliced almonds and chopped cashew nuts sauté until golden brown.
7. Now add raisins and sauté well.
8. Add the grated bottle gourd and sauté for 5-7 minutes until it softens and any residual water evaporates.
9. Pour the milk and cook the bottle gourd, stirring occasionally. Continue cooking until the milk reduces and becomes thick, and the bottle gourd absorbs the milk completely.
10. Add khus syrup and sauté until mixture dries up.
11. Add Khoya, pistachio powder and green cardamom powder to the kadai. Stir well to mix it with the lauki. Cook for another 5-6 minutes, allowing the mixture to thicken further.
12. Add sauté nuts and mix well.
13. Grease a tray with a little ghee. Add saute nuts and chopped pistachio evenly spared in a tray.
14. Spread the lauki mixture evenly in the tray, pressing it down gently to set.
15. Leave the barfi at room temperature for an hour to set well.
16. Let the barfi cool completely. Once set, cut into squares.
