For Blanching
. Spinach - 500 gm
. Green chilli - 3-4
. Handful coriander leaves

. Mustard oil - 1 /2 cup
. Cumin seeds - 1 tsp
. Cinnamon - 2 inch
. Bay leaf - 1
. Clove - 2
. Dry red chilli - 1
. Chopped ginger - 1/2 tbls
. Chopped garlic - 2 tbls
. Onion - 1 large
. Tomato - 1 medium
. Salt - 1 tsp
. Coriander powder - 1 tsp
. Red chilli pwd - 1 /2 tsp
. Turmeric powder - 1 /8 tsp
. Spinach puree
. Dry Fenugreek leaves - 1 tsp
. Fresh Curd - 2 tbls
. Milk - 1 cup
. Water as required
. Garam masala - 1 /2 tsp
. Fresh cream or malai - 2 - 3 tbls
. Fried paneer - 250 gm
. You can add Butter also

Tadka
. Oil or ghee - 2 - 3 tsp
. Garlic - 1 tsp
. Dry red chilli - 1
. Asafoetida - 1 /8 tsp
. Cumin seeds - 1 /4 tsp
