A step by step guide to making a Traditional Japanese Milk bread, this is made with a roux to start with and is essentially an enriched dough bread. This is also once again a recipe by Ken Forkish.
For the roux
125 g Water
25g White bread flour

For the main dough
400g White bread flour
215g Whole milk (cold)
30g Granulated sugar
8g Fine sea salt
8g Instant dried yeast
60g Unsalted butter (cold)
150g Water Roux
