A delicacy from the khandesh region of Maharshtra, prepared by sautéing tender chicken in special khanedeshi masala. Tastes amazing with a bhakri or rice.

KHANDESHI CHICKEN

Ingredients

750 grams chicken, cut into 2 inch pieces on the bone
2 tsps khandeshi garam masala
Masala
2 tbsps oil
8-10 garlic cloves
1 inch ginger, roughly chopped
2 medium onions, sliced
Salt to taste
8-10 cashew nuts
2 tbsps coriander seeds
1 tsp cumin seeds
¼ cup grated dried coconut
Tempering
2-3 tbsps oil
2 tbsps chopped garlic
2-3 green chillies, chopped
2 medium onions, chopped
Salt to taste
2 medium tomatoes, chopped
1 sprig of curry leaves
1 tsp red chilli powder
½ tsp turmeric powder
½ lemon
2 tbsps chopped fresh coriander leaves + to sprinkle
Jowar bhakri for serving

Method

1. Heat oil in a kadai. Add garlic, ginger, onions, salt and sauté till onions turn golden brown.
2. Add cashew nuts, coriander seeds, cumin seeds, dried coconut and sauté for 2-3 minutes.
3. Take the pan off the heat and allow to cool.
4. Transfer in a blender jar, add ½ cup water and grind to a fine paste.
5. For the tempering, heat oil in a kadai. Add garlic, green chillies and sauté for 30 seconds.
6. Add the chopped onions, salt and mix well. Sauté on medium heat till golden brown.
7. Add tomatoes and cook till they turn soft and pulpy. Add curry leaves and mix well.
8. Add red chilli powder, turmeric powder and mix.
9. Add chicken and sauté on high heat for 4-5 minutes. Add the ground mixture and sauté for a minute.
10. Add khandeshi garam masala and mix well.
11. Add 2 cups water, cover and cook on medium heat for 15-20 minutes.
12. Squeeze lemon, add coriander and mix well.
13. Transfer in a serving bowl , sprinkle coriander and serve hot with jowar bhakri.
