Everything I ate in a day -- fully plant-based (100% vegan) and West African dishes. We have recipes inspired from Guinea all the way to northern nigeria. I love eating this way because these are flavours I grew up in and new cooking techniques I am learning as I explore more of West Africa.

Recipes
Fonio Porridge - 2 servings
Ingredients
3 cups of liquid (can be milk can be water)
3-4 medjool dates (roughly chopped)
1/4 teaspoon nutmeg
a pinch of salt
1 tablespoon of peanut butter
5 tablespoons of fonio

In a pot, add the plant liquid and dates and bring to a boil (keep an eye on it so that it does not overboil). Once it comes to a boil, add the nutmeg, salt and peanut butter. Mix in the fonio and allow it to cook at medium heat for 5-10 minutes till thicken. Serve with fruit and seeds of choice.

Ghanaian Spaghetti Stew - 4 servings
1 pack of ground beef (I used beyond meat beefless ground)
1 onion chopped
3-4 cloves of garlic (crushed/finely minced)
1 thumb size of ginger (finely minced)
3 tablespoons of tomato paste
1 can (398ml/14oz) of mutti finely crushed polpa (or tomato sauce). Can sub with 3-4 fresh tomatoes
1/2 cup of water
1-2 teaspoons of chilli powder
1 vegetable bouillon cube
2 teaspoons of all purpose seasoning (use whatever you like)

Directions
1. First, fry the beef till cooked and set aside
2. In a pot, saute the onions till soft then add the garlic and ginger mince. Cook down for 5 minutes
3. Add the tomato paste and cook for 3-5 minutes at low heat
4. Increase the heat to medium then add the tomato sauce, water, chilli powder and vegetable bouillon
5. Allow the stew to cook for 15-20 minutes at medium low till thickened and oil starts to separate to the top
6. Add the fried ground beef as well as the all purpose seasoning and cook for 5-10 minutes at low heat
7. Serve with spaghetti.

Dessert -- Pumpkin Spiced Millet Cake
Ingredients
1 cup of milk (I used soy)
1/2 teaspoon apple cider vinegar
1 cup of pumpkin (steamed or boiled)
1/2 cup of vegetable oil
1 flax egg (1 tbsp ground flax seeds + 3 tablespoons of water)
2.5 cups of millet flour
1/2 cup of sugar
1 tablespoon of baking powder
1/2 teaspoon of baking soda
1/4 each of cloves, cinnamon, ginger powder and nutmeg powder
a pinch of salt

Directions
1. Preheat your oven to 350°F
2. Mix the milk and apple cider and set aside for 5 minutes. This will make a buttermilk
3. Make the flax egg and set aside for also 5 minutes to thicken
4. Mix the dry ingredients -- millet flour, sugar, baking powder, baking soda, salt, spices.
5. Blend the pumpkin with the milk mixture, flax seeds and oil
6. Combine the wet ingredients with the dry ingredients.
7. Bake in an 8x8 inch square baking pan at 350°F for 45 minutes or until a toothpick comes out clean
8. Cool for 5-10 minutes then slice to enjoy. You can keep it in the fridge for up to a week.
