EDIT 0:13 to 0:14 SOAK NOODLES

Calling all noodle lovers! Make this easy noodle stir-fry ala Conti's with veggies, and vegan chicken chunks! The distinct color of the noodles comes from annatto seeds or "atsuete" which makes it vibrant and appetizing! Topped with loads and loads of crispy garlic, this will undoubtedly be your new favorite main or snack!

INGREDIENTS
250g sotanghon (soaked 10-15 minutes or until slightly soft)
1 cup vegan chicken chunks, chopped
1 tbsp atsuete
1/4 cup vegetable oil (for the atsuete oil)
3 tbsp chopped garlic (for the atsuete-garlic oil)
1 cup carrot sliced thinly
1 cup baguio beans sliced thinly
1 onion chopped
1.5 tbsp vegan patis (fish sauce) or to taste
2 cup vegan chicken stock (1 chicken buillon cube in 2 cups water, we used Massel)
1 tbsp garlic for sauteeing
White pepper to taste

PROCEDURE
1 Chop chicken chunks into 1" pieces. Set aside.

2 Heat 1/4 cup oil in a small pan. Once the oil is hot, set flame to low and carefully add atsuete / annatto seeds. Let heat while stirring for 2 minutes. Filter the oil from the seeds. add 3 tbsp garlic into the atsuete oil and let cook in medium low for about a minute. Make sure not to burn the garlic. Set this aside.

3 In a wok or large pan, add a bit of the atsuete oil, saute onion until translucent about 2 minutes. Add the garlic and cook for 1 minute. Add in the vegan chicken chunks and cook for 3 minutes. Add the baguio beans and carrots and stir. Add about 1/4 cup of the vegan chicken stock to cook the vegetables. Season with vegan fish sauce and white pepper. Let cook for 2 minutes until veggies have become tender but still crisp.

4 Add the sotanghon and remaining vegetable stock. Add more water if noodles are still not tender (we added 1/4 cup water). Once the noodles are completely cooked, add the atsuete oil with garlic. Mix until the noodles are well combined and coated with oil. Season with more white pepper if desired.

5 Serve with a squeeze of calamansi and more crispy garlic bits!
