Pakistan is a young country with an ancient civilization,this I have said multiple times, but in our journey of discovering and rediscovering who we are, we have parted many times, one such parting was in 1971 when Pakistan lost more than half of itself. This Episode remembers that history through its culinary culture which was and remains as part of our food heritage. Chakma is a Buddhist Kingdom in the Chittagong Hill Tracts, now Bangladesh, former East Pakistan, whose Raja chose Pakistan in 1971. Raja Tridev Roy chose Pakistan and today ,Pakistan on a Plate, honours his choice, his sacifice by including his people's cuisine as ours forever. Documenting our culinary cuisines should be comprehensive and our past and who we were is as important as who we are and plan to become. I hope you enjoy this episode, I did ,and learned alot about wonderful recipes which reflect the varied and beautiful produce of rich South Asia.
