Fasolada- Greek white bean soup

Fasolada also known as Fasolatha is a delicious, vegan white bean soup from Greece. It's made with some very basic ingredients but is full of flavors. This classic Greek soup is considered one of the National dishes of Greece.

Ingredients
1.5 cups dried white beans
½ brown onion, finely chopped
4-5 garlic cloves, finely chopped
1 medium carrot, chopped
1 celery stalk, chopped
2 tablespoons finely chopped fresh dill
1.5 tablespoons tomato paste
Juice of ½ a large lemon around 4 tablespoons, adjust to taste
1 bay leaf
½ tablespoon dried oregano
½ teaspoon paprika
¼ teaspoon ground black pepper
Salt to taste
8 cups vegetable stock
1 + 2 tablespoons extra virgin olive oil
