Ingredients

Mutton-I kg

Basmati Rice-31/2 glass

Big onion(savala)-3

Ginger-1 med piece

Garlic-10

Green chillies-10

Small onion-20

Turmeric powder-1/2tsp

Garam masala-1tsp

Chilli powder-1tsp

Ghee-3tsp

Tomato- 11/2

Curd-2tbsp

Lemon juice of -1

Salt-to taste

Big onion-2 (for frying)

Cashew nuts-15

Raisins -15

Mint leaves -

Coriander leaves


Almonds-6 & cashew nuts -6 (soak them in water )

Pineapple-2 tbsp (opt)

For Rice

Water-20 glass

Cinnamon-2

Cloves-4

Cardamom-2

Fennel seeds -1 pinch

Lemon juice-1

Ghee-1tsp

Biriyani Masala

Fennel seeds-2tbsp
sha jeera-1/4tsp
Cardamom-12
Cloves-1tsp
Cinnamon-2-3pieces
Mace-1/4of 1
Pepper -10


Method


Wash the rice well and then soak for 20 minutes.Boil water and add all spices and add enough salt ...Add this rice to the boiling water ..Cook until 3/4th done ..Add lemon juice and ghee to this just b4 draining ..Drain the rice and keep aside …(If u want u can remove the cinnamon, cloves, and cardamon from the rice) ….

Now fry 2 big onion slices in ghee and keep aside ..fry raisins and cashew nuts also …Cut pineapple and coriander leaves into small pieces..

.Mix turmeric powder to mix and keep aside ..In a blender add soaked almonds and cashew along with little water and grind well..keep aside

In a cooker add mutton .chilli powder, turmeric powder,garam masala, salt and water .mix well and cook .

Crush big onion, small onion, ginger, green chilies, salt and garlic together.

Heat non stick kadai and add 3tbsp of oil or ghee.

Add this crushed mix to this ghee and saute well…Saute until the mix becomes light brown and ghee clears..

Now add tomatoes and cook well ..
Then add curd and badam cashew mix and cook well ..
.Now add mint coriander leaves, cashew ,raisins,fried onion and mix well ..Check the salt .. If u want u can add pineapple too..
Now add cooked mutton and mix well .. Allow to boil and get a thick consistency ..

Now its time for setting the biriyani…Take a deep bottomed non stick kadai ,pour the mutton masala then pour 1 layer of rice ,above this add coriander leaves and pineapple pieces ..Then add rice ..Above this sprinkle ghee so that it covers the rice evenly..Then add another layer of rice and sprinkle almond-turmeric coconut milk ..Then add fried cashew nuts,raisins and big onion ,coriander and pineapple..Cover the rice with this ..Finally sprinkle 1 tsp of ghee and cover the kadai with a tight lid ..

Now heat a dosa tawa ..Place the biriyani kadai on the tawa and let it cook on the tawa for at least 20 to 30 minutes ..(in low heat )..

After 30 minutes open the kadai and mix the biriyani well so that it is evenly done …So the tasty and easy mutton biriyani is ready to serve ..Serve it with raitha and pickle ..Pineapple raitha is a very good combination with this biriyani …..
